Abstract
Malt prepared from sorghum (Sorghum bicolor) that was germinated at 25 degr ees C for 0, 1, 2 or 3 days and dried at 60 degrees C for either 2.5, 5, 7. 5 and 10 h, was evaluated for alpha-amylase, beta-amylase and endo-(1,3)(1, 4)-beta-D-glucanase activity. Germination had a highly significant effect o n enzyme activity (P < 0.01). However, beta-amylase was not detected in any of the samples in this experiment. Further analysis using Duncan's Multipl e Range Test indicated that there was no significant difference in alpha-am ylase activity in samples dried between 5 and h. The activity of endo-(1,3) (1,4)-beta-D-glucanase was low compared with alpha-amylase activity. (C) 20 00 Elsevier Science Ltd. All rights reserved.
