Abstract
Sucrose octapalmitate-d(11), d(24) and d(248) have been synthesized. Using H-2 NMR T-1 and analyses of the temperature dependence of the lineshapes, a detailed description of the solid state molecular motional modes is presen ted. Activation energies for methyl and methylene group rotation in the fat ty acyl chains have been determined. The sucrose moiety is found to be stat ic on the solid state deuterium NMR timescale.
