Abstract
Fumonisin mycotoxins are a group of structurally related secondary metaboli tes produced by the fungus Fusarium moniliforme. For the quantitative deter mination of fumonisin FB1 in corn products, a rapid method without any addi tional clean-up or purification of the sample extract was developed utilizi ng high-performance liquid chromatography-electrospray mass spectrometry. U sing labelled fumonisin FB1-D-6 as an internal standard the quantification Limit for FB1 was set at 20 ng/g sample with a signal-to-noise ratio of 10: 1.
