Abstract
The conversion of curcumin by soybean lipoxygenase leads to three stereoiso mers of 2-[(4'-hydroxy-3'-methoxy)phenoxy]-4-(4"-hydroxy-3"-methoxy-(phenyl )-8-hydroxy-6-oxo-3-oxabicyclo[3.3.0]-7-octene. Their structures and confor mational behaviour were elucidated by various H-1 and C-13 NMR methods and high-performance liquid chromatography-electrospray ionization tandem mass spectrometry.
