Abstract
Three instrumental methods (Hue-Saturation-Intensity, chromometer, Colorime ter) were compared to classify lentil seed into official grades and to rela te seed quality to electrolyte leakage, pH of soak water, and germination. Linear discriminate function analysis indicated that the chromometer gave t he most consistent sample classification of nine different categories of se ed browning. High quality green seeds had a higher pH, lower seed electroly te reading, and higher germination than lower quality brown seeds. The chro mometer method can potentially provide a rapid and objective method for ass essing the color of lentils during official grading.
