Ew. Harris et A. Nowverl, What's happening to soul food? Regional and income differences in the African American diet, ECOL FOOD N, 38(6), 2000, pp. 587-603
When African American diets are described in the literature, they usually r
eflect traditional Southern diets. This study uses food consumption data fr
om the USDA 1994-96 Continuing Survey of Food Intakes by Individuals (CSFII
) to examine the African American diet. Foods consumed more frequently at b
reakfast, lunch and dinner were found to differ by region and income. These
findings indicate that dietary guidance must consider evolving economic, s
ocial, cultural, environmental, and even ethnic changes within the African
American community.
