Abstract
A novel process for the production of peptide mixtures is proposed. Biologi cally active peptides were synthesized using a thermolysin-catalyzed hydrol ysis of a corn protein (zein) in an aqueous two-phase system. The mixture o f-peptides which was selectively recovered from the dextran-rich bottom pha se had a higher angiotensin-converting enzyme (ACE) inhibitory activity tha n native zein.
