Abstract
Respiratory measurements were executed in muscle biopsies of pigs of the br eeds Pietrain and German Landrace in dependence on age and stress setting b y means of a high-resolution Oxygraph to the determine of the mitochondra f unction. The results indicate that the stress produced by nose sling treatm ent has similar effects in both breeds on the functional characteristics of the mitochondria. The significantly increased atractylate inhibited respir ation in Pietrain pigs ca be used as an additional marker for PSE meat.
