The C-13 NMR study of triacylglycerols allows the determination of the
positional distribution of fatty acids on the glycerol backbone. Tria
cylglycerols of three oils were studied : Pinus koraiensis oil charact
erized by the presence of fatty acids with a first double bond in posi
tion 5, Brassica juncea oil containing a high level of erucic acid, Tu
ng oil of which conjugated polyethylenic fatty acids are in the majori
ty. The comparison with the results obtained by C-13 NMR and those obt
ained by the action of a Grignard product on triacylglycerols allowed
us to validate this spectroscopic method.
