Laas. Walther et al., Variability in polyphenols content of different kinds of wine and its potential applicability to the knowledge of their biological effects, MED CLIN, 114(9), 2000, pp. 331-332
BACKGROUND: Wine polyphenols have antioxidant properties. Different polyphe
nols have various biological activities on atherogenesis and carcinogesis.
MATERIAL AND METHODS: The composition on 5 polyphenols of 16 wines of Casti
lla (Spain) is determined by HPLC.
RESULTS: Polyphenols concentrations varied largely among the different wine
s. Most red wines had higher amounts of polyphenols than white wines.
CONCLUSIONS: The diverse composition on polyphenols of each wine allows to
suggest different biological effects.
