Abstract
The concentrations of trans- and cis-isomers of four stilbenes produced by grapevines - piceid, resveratrol, resveratrol dehydrodimer, and pterostilbe ne - were determined in wines from Burgundy and Switzerland. Analyses were carried out by direct injection high performance liquid chromatography. All red wines studied contained high levels of piceid and resveratrol, but no pterostilbene. Resveratrol dehydrodimer was also detected. It is the first time that this compound is reported as a constituent of wine.
