Abstract
The application of a rapid method of moisture and fat analysis during the p roduction of "light" frankfurters is here reported. This kind of frankfurte rs meets the increasing consumers demand of food with reduced energetic con tent and with balanced nutritional properties. It is therefore necessary to carry out a strict control of those parameters thus giving to the producti on department real time data in order to obtain a correct processing.
