Genetic improvement of the nutritional and technological value of the pea s
eed and its stability is of major relevance for the economical development
of the pea crop. The protein content and composition is one of the major co
mponent determining this value. Our research aimed at better understand the
genetic control of protein storage with the idea in mind of breeding pea f
or improving their value. We present, in this paper, the great complexity o
f pea proteins, which consist in a great chemical composition of each fract
ion which compose the pea proteins, we present also, the different breeding
strategy chosen by breeders to improve this character.
