The suppressive effects of noncyclic cyanamides (guanidine hydrochloride, u
rea, and thiourea) on the retrogradation of waxy corn starch (WCS) gel were
examined using differential scanning calorimetry and X-ray powder diffract
ion. We demonstrated that thiourea, guanidine hydrochloride, and urea effec
tively suppressed the retrogradation of the WCS gel in this order.
