The anthocyanin content of tubers and shoots of the purple potato, Solanum
tuberosum cv. Congo has been determined using various chromatographic and s
pectroscopic techniques to be petanin and the novel 3-O-[6-(4-ferulyl-O-alp
ha-rhamnopyranosyl)-beta-glucopyranosides]-5-O-glucopyranosides of petunidi
n and malvidin. Acylated pigments constitute more than 98% of the total ant
hocyanin contents both in tubers and shoots.
