It has been studied the viscous and viscoelastic behaviour of aqueous
systems that contained a mixture of two sucrose stearates of different
hydrophilic/lipophilic balance (HLB) at a temperature of 50 degrees C
. The rheological response depends clearly on the resulting HLB value,
consequence of the different aggregation structures that appear in su
ch systems, corresponding to gel type for low values (7-9) and micella
r type for higher values (13-15).
