The emission of malodorous compounds from residual wastewater of four winer
ies in the Mediterranean region was studied. In order to avoid the discharg
e of this effluent to a river, it must be concentrated or eliminated; for e
xample, by evaporation. The odorous compound emission from the wastewater s
torage was characterized and to try to stop malodorous compound formation d
ue to biological degradation of organic matter, the liquid effluent was aci
dified and aerated. The acidification test showed some modification of odou
r quality, however,the unpleasant smell still remained. On the other hand,
the aeration of such an effluent resulted in the removal of the smell but o
nly for wastewater with a total organic carbon value lower than 500 ppm.
