Abstract
Amylopectin gels, aged for different times (0-39 days), were used to i nvestigate the effects of ageing on the diffusion of bovine serum albu min. It was found that the rate of the diffusion initially decreased r apidly as the ageing time increased (less than or equal to 10 days). T hereafter, it continued to decrease but more slowly.
