Abstract
Prolamin of brown rice (Oryza sativa var. indica L.) was extracted by n-pro panol. Polypeptide patterns was analysed through ID-SDS-PAGE. Gel electroph oretic profiles indicated that prolamin of rice is composed of at least fou r major and seven minor polypeptides. A newly reported polypeptide was 29kD . The other major polypeptides were 14.3, 15.90 and 23 kD. A cluster of fiv e minor bands was detected in between 15 and 23 kD and another cluster of 2 minor bands in between 23 kD and 29 kD. The 14.3 kD polypeptide was the mo st intense. The amount of proteins loaded, the percentage of gel and the ty pe of solvent used for extraction were found to be important factors for de tection of all the prolamins at a time.
