Detection and enumeration of Alicyclobacillus acidoterrestris in products a
nd on equipment surfaces are described, including sample heat treatment and
membrane filtration to improve sensitivity. Rapid identification of A. aci
doterrestris is discussed, including a pragmatic approach based on odour, b
iochemical test strips, ribotyping and cell wall analysis. Practical applic
ation of both cultural and microscopic methods to an investigation of a com
mercial spoilage problem is described. Growth of A. acidoterrestris (vegeta
tive cells or spores) in orange juice and apple juice was prevented by benz
oic acid (150 mg/L), sorbate (300 mg/L) or (sic).
