The use of fluorogenic substrates with intramolecular fluorescence quenchin
g as substrates for chymosin was studied. It was shown that chymosin hydrol
yzes the Phe-Phe peptide bond. The effect of pH on the hydrolysis of substr
ates by chymosin was investigated. The catalytic characteristics of the hyd
rolysis of the fluorogenic substrates were obtained at the pH optima. The i
nfluence of dimethylformamide on chymosin activity was studied.
