Investigations of anaesthetic effect of Eugenol ("Aqui-S") and chemical sim
ilar structured compounds on eel (Anguilla anguilla). A comparison of the a
naesthetic effect on eels (Anguilla anguilla) between the commercially avai
lable eugenol (4-allyl-2-methoxyphenole or 2-methoxy-4-propylphenole respec
tively; "Aqui-S") and the chemically similar structured antioxidants BHA (2
-tert.-butyl-4-methoxyphenole) and BHT (2,6-di-tert.-butyl-p-cresole) showe
d, that BHA exerted the strongest effect. Eugenol ("Aqui-S") and BHA are bo
th useful for breakdown of stress during transportation or keeping in tanks
of eels, but not suitable for industrial stunning/slaughtering of eels. De
slimin process of eels was optimal, when a special mixing and rotating mach
ine (tumbler construction or mixer principe) with the following parameters
were used: addition of 3 % of a saturated chalk milk solution (Ca(OH)(2)),
10 % soda or 0,3 % ammonia solution (ratio of alkaline solutions : eels = 3
: 97); 10 r. p. m.; desliming time 10 minutes. The use of the desliming ag
ent chalk milk has ecological and economical advantages. The desliming toss
was between 5 and 6 %.
