Investigations of the growth of sucrose single crystals (P2(1)) were conduc
ted in pure solutions with 10% supersaturation at 22 and 50 degrees C and i
n the presence of fructose and glucose. In the first 2-3 h, dissolution was
observed at the positive end of the polar b-axis of the crystals in the ne
gative direction, however, the growth rate was initially higher than during
the later growth phase. These effects can be influenced by a DC electric f
ield and by adding the above-mentioned monosaccharides. Potential calculati
ons supported that specific adsorption as well as the adsorption of foreign
