The trypsin inhibiting activities (values) of 55 common and edible mushroom
samples (of 35 taxa) were measured quantitatively. The inhibiting activiti
es ranged between 0.36 and 10.42 TIU/mg dry mass. The largest values were f
ound for Laccaria and Hygrophorus species, Craterellus cornucopioides, Gomp
hidius glutinosus, Macrolepiota rhacodes and Hydnum repandum. The inhibitin
g activities found were higher than those of cereals but lower than those o
f some fabaceous plants.
