G. Andreotti et al., Milk identification of different species: C-13-NMR spectroscopy of triacylglycerols from cows and buffaloes' milks, J DAIRY SCI, 83(11), 2000, pp. 2432-2437
Triacylglycerols from cows and buffaloes' milk fat were investigated by C-1
3 nuclear magnetic resonance (NMR) spectroscopy. By the addition of pure tr
iacylglycerols standards, we identified the resonances of both milk fats, a
nd the peaks were used for qualitative and quantitative analysis of acyl gr
oups. Multivariate analysis treatment of triacylglycerols distribution and
composition parameters enabled us to identify milk. This study shows that N
MR can safely be used to quantitate milk fatty acid content, providing uniq
ue information for milk identification of different animal species.
