There is an increasing need for analytical methods for the detection of gen
etically modified organisms (GMOs) detection in food due to the growth of u
se of GMOs, or their derivatives, in the food industry. This paper aims to
briefly introduce the reader to GMOs, to describe the state of the art in d
etection methods for GMOs, and to provide the reader with the associated te
rminology, mainly borrowed from molecular biology. The main characteristics
of GMO are illustrated and future developments using the biosensor approac
h for detection are presented.
