Some features of starch cleavage in a mechanical procedure for production o
f starch gelatinous materials with the use of rotor-pulse activator were st
udied. The main parameters characterizing the degree of starch cleavage (de
gree of grain destruction, size of colloid particles, content of water-solu
ble fraction, and degree of degradation processes) were determined dependin
g on the conditions of the mechanical treatment.
