Abstract
Vitamine C(VC) was solubilized in the inner region in the interphase o f O/W and W/O microemulsion, but n-C5H11OH was solubilited in the oute r region, The water penetrating into the interphase or amphiphilic lay er was prevented from VC by n-C5H11OH so that the stability of VC was enhanced, The mechanism of enhancing stability of VC in O/W and W/O mi croemulsion droplets was proved by the enhancing stability of VC in la mellar liquid crystal.
