Abstract
Glycaemic and insulinaemic index of maltitol and maltitol-containing c hocolate have been determined in healthy subjects with reference to gl ucose and compared with those of sucrose solution and sucrose containi ng chocolate. AU maltitol containing products (solutions and chocolate ) show a reduced glycaemic index. Insulinaemic index of maltitol solut ions is also low, while that of maltitol chocolate remains high.
