Glucose oxidase (GOD) was encapsulated within calcium alginate gel capsules
. The effects of gelation conditions on capsule characteristics such as thi
ckness. percentage of enzyme leakage and encapsulation efficiency were stud
ied and the optimal conditions for GOD encapsulation obtained. Oxidation of
