Abstract
Physicochemical principles of fractionation and identification of sunflower seeds phospholipids with high-voltage paper electrophoresis and thin-layer and high-performance liquid chromatographies were developed. For the first time, the hydration properties of the lipids were studied by considering n ot only the structure of the hydrophobic components and the effect of polar groups. but also the stale of hydrophilic groups. The thermodynamic proper ties of hydration of individual lipids were determined by IR spectroscopy.
