Abstract
A simple method for the visualisation of wine yeast esterase (carboxylester ase EC 3.1.1.1)activity on electrophoretic gels was developed, using the fl uorescent substrate fluorescein diacetate. The zymogram system allows a sen sitive detection of esterase bands in only 5 min of incubation of both nati ve and sodium dodecyl sulfate gels.
