Abstract
The proline content of unifloral and multifloral honeys from Galicia (north west of Spain) and from Basque Country (north of Spain) was quantified to d emonstrate if the content of this predominant amino acid could allow to dis tinguish between the different types of honeys (floral or honeydew), betwee n different unifloral honeys (Castanea saliva Miller, Erica sp., Eucalyptus sp., Leguminosae Tipo G, Leguminosae Tipo T, Rubus sp.) or between uniflor al and multifloral honeys. The results confirm that the Variability of prol ine values of the honeys with different botanical origin and from different geographical areas makes it impossible to set parameter for characterizing the origin (floral or honeydew), makes it impossible to distinguish the un ifloral honeys each other and to distinguish unifloral honeys from multiflo ral honeys.
