The various possibilities in the transformation and packaging of fish produ
cts from around the world induced the Venetian Veterinary Service to confir
m the anatomical recognition - operated on the field - through a laboratory
analytical method.
The AA set up an electrophoretic analysis allowing a reliable identificatio
n of different fish species, being thus useful to recognize commercial frau
ds.
This work reports some frauds about commercial fish products detected thank
s to this method and some studies on other fish species that could have an
incorrect commercial denomination.
