Y. Zhang et al., Dynamic study of the interaction between beta-lactoglobulin and phospholipids during complex film formation, ACT CHIM S, 59(5), 2001, pp. 659-664
Dynamic interfacial tension of phospholipid/protein adsorption was studied
by ADSA(axisymmetric drop shape analysis, ADSA) to gain the information abo
ut the mixed protein/phospholipid multilayers. AFM was used to study the mo
rphology of the complex film. DPPE(dipalmitoyl phosphatidylethanolamine), D
PPC (dipalmitoyl phosphatidylcholine), DPPA(dipalmitoyl phosphatidic acid)
exhibited quite different adsorption behavior in the initial step due to th
e net charge of their head group, but the interaction between phospholipid
and protein seemed beyond the statistic force during the construction of pr
otein/lipid multilayers when the different adsorption curves tended to coin
cide at the end. The adsorption process was dominated by different kind int
eractions at the different steps, respectively.
