Abstract
Water activities of aqueous solutions of sorbitol and xylitol, and of these polyols with sodium chloride, were measured and correlated with a simple e mpirical equation. Parameters for the equation were obtained, and from them , values of water activity were calculated with an average relative deviati on of <0.12% for all the systems studied.
