Fish quality changes are usually connected with changing of appearance and
texture. The assessment of appearance is a part of sensor evaluation, carri
ed out by experts providing objective but inexact data. Up to now there is
no instrumental sensor supplying data which correlate to the experts assess
ment data for appearance. Instrumental colour measurement mirrors only a pa
rt of appearance. The objective of the method presented here is to fit the
experts inexact but wide knowledge with the data from cameras, A test for t
he suitability of the method is the classification of fish species from ski
nned fish fillets by a computer aided interpretation of surface patterns.
