Abstract
Freezing is a widely used procedure for preserving fish, but the process ca n cause degradation of the proteins and adversely affect taste and texture. Accordingly, many people are prepared to pay more for the fresh product. T his article describes the method that will differentiate fresh fish from fr ozen.
