Abstract
Effect of tissue structure on rehydration properties of convective dried ap ple and potato was investigated in this work. It was evaluated comparing co urse of drying and rehydration of plant tissues and their chemical models. It was found that models dried faster and during rehydration imbibed less w ater, leaked more solubles and returned in smaller degree to initial volume .
