Abstract
Tannase (tannin acyl hydrolase) catalyses the hydrolysis of ester bonds in hydrolysable gallotannins releasing glucose and gallic acid. The product in hibits the enzymatic reaction. A membrane reactor with immobilized enzyme w as studied. A spiral membrane module represents the separation part. A math ematical model describing the process was developed. The productivity of pr ocess was determined.
