Abstract
Emulsions can be characterised on the basis of their structure and rheologi cal properties. In the paper the Cross model was proposed to determine the flow behaviour of "oil-in-water" emulsions Also the dependence of the model parameters on the concentration and the size of the inner phase droplets w as studied. It was proposed to use the parameter alpha as an indirect measu re of emulsions stability.
