A study was made to explore the rheological properties of the water-soluble
mucilage of a green laver, Monostroma nitidium. The apparent viscosity of
the water-soluble mucilage decreased with increasing shear rate, with incre
asing solution temperature (from 4 to 70 degreesC), with increasing NaCl co
ncentration from (0.5% to 2.0%), and decreased slightly with a shearing tim
e for 60 min. The decreases in the apparent viscosity were more pronounced
for higher-concentration water-soluble mucilage. However, it increased with
increasing solution pH from pH 3 to 9.
