The effect of temperature in hydrostatic pressure treatment on the germinat
ion of B, stearotheromphilus spores was investigated. There were optimum te
mperatures in the germination ratio in the treatment at 10, 20, 30 and 40 M
Pa for 720 min. There was also an optimum temperature on the germination of
B. stearothermophilus spores by chemical germinants at 0. 1 MPa (under atm
ospheric pressure). Therefore, it was considered that the cause of optimum
temperature of inactivation was the optimum temperature of germination enzy
mes under hydrostatic pressure below 40 MPa.
