Abstract
Agriculture has already been and will be undergoing remarkable transitions, the most important one is that from a quantity-oriented production for a n ational self sufficiency with food to a quality-oriented market supply with high quality food products in a global market. These changes are simultane ously challenge and chance for the producers, packer/processors, the allied industries and the veterinary profession. The principles of pre-harvest food safety, quality management and third-par ty certification in agriculture is explained in detail. The goal is to prov ide the enablers of a consequent tracing back and tracing-forth along the f ood production chain by treating vertically coordinated supply chains with identity preserved production procedures.
