Abstract
In the present work, comparison between the results of electrical impedance measurements and chemical analysis was done on broilers (Lohmann). The res earch was carried out on the breast muscles (M. pectoralis maior) and leg m uscles backside of thigh bones (M. gluteus medius) on the live broilers and after slaughtering. The HP LCR-Meter-4284A device was used to measure the impedance module by puncturing electrodes (distance-2.5 cm, depth-0.8 cm) o n the middle part of the breast and leg muscles, along muscle fibers. The i mpedance module \Z \ and phase angle were recorded. Water content, total fa t, proteins and ashes were determined by chemical analysis. Although, the m ultifrequency analysis was effectuated, the frequency of 15 kHz was found t o be most favorable for impedance measurements. Regression analysis showed highly significant correlations between impedance module and phase angle an d chemical determination of the water content and fat mass. The results of this study illustrate that impedance analysis can be used to predict water content and fat mass in breast and leg muscles of broilers.
