The dielectric properties of maple syrup at different moisture content
levels were determined at 25 degrees C. An effort was made to observe
the behavior of the dielectric properties irt relation to the moistur
e content and the data were also examined to test fbr an empirical mod
el available in the literature, which was developed using similar prod
ucts. The variation of the dielectric properties of the maple syrup wi
th moisture content was found to be fairly linear for the range of moi
sture content studied. The results also agreed fairly well with the su
ggested model and; hence, the dielectric properties of maple syrup can
be expected to behave similarly in the moisture content and temperatu
re range prescribed by the model.
