Abstract
Quasi elastic neutron scattering (QENS) results on aqueous solutions of L-a scorbic acid (Vitamin C) are reported. Data, collected by the IRIS spectrom eter at the ISIS facility on partially deuterated L-ascorbic acid in D2O an d on hydrogenated L-ascorbic acid in H2O, allow to characterize the diffusi ve dynamics of both hydrated Vitamin C and water, revealing that this latte r is strongly affected by the presence of L-ascorbic acid and furnishing a hydration number value of similar to5 at T= 33 degreesC.
