Abstract
During the rehydration cycles of three lots of stockfish, visual controls a nd/or laboratory examinations of the fish, the water used for rehydration, the working areas and the utensils were performed. The monitoring of the di fferent working steps showed that the procedures in use in the controlled p lant can assure the production of rehydrated fish of good hygienic and sens ory qualities.
