Ak. Gupta et N. Kaur, FRUCTAN STORING PLANTS - A POTENTIAL SOURCE OF HIGH-FRUCTOSE SYRUPS, Journal of Scientific & Industrial Research, 56(8), 1997, pp. 447-452
Conventional method of preparing fructose syrups is based on a multist
ep process starting from starch. Inulin, a fructose polymer which is s
tored as reserve material in many plants, could prove to be a better s
ource for producing fructose. The progress made on hydrolysis of inuli
n by acid and Inulinase obtained from microbial organisms has been rev
iewed. Possibility of using immobilized inulinases for producing fruct
ose has also been discussed.
