Abstract
Conventional method of preparing fructose syrups is based on a multist ep process starting from starch. Inulin, a fructose polymer which is s tored as reserve material in many plants, could prove to be a better s ource for producing fructose. The progress made on hydrolysis of inuli n by acid and Inulinase obtained from microbial organisms has been rev iewed. Possibility of using immobilized inulinases for producing fruct ose has also been discussed.
