Abstract
Glycosyltransferase GT-1 was used to catalyze the synthesis of alpha-g lycosyl stevia sugar. Various influent factors were discussed, The res ult showed when the reaction came to a certain extent, transglycosylat ed amount changed very little with increase of amount of enzyme and st arch. The taste of stevia sugar promotes greatly after transglycosylat ed treatment.
